Santo Cuviso Bacanora is an exceptional artisanal spirit crafted in the highlands of Sonora, Mexico where our 17,000-acre ranch is located. This premium spirit is deeply rooted in the rich cultural heritage and history of the region, offering a unique and authentic experience for connoisseurs of fine liquors.

Bacanora has a storied history dating back over 300 years. Originating in the rugged mountains of Sonora, it was traditionally produced by the indigenous Opata people, who perfected the art of distilling the local Agave Pacifica (Agave Angustifolia var. pacifica), a species of agave endemic to the region. Despite its long-standing tradition, Bacanora was illegal to produce - punishable by death - from 1915 until 1992. During this period, production continued secretly, preserving its traditional methods and rich cultural significance. In 2000, Bacanora received Denomination of Origin status, recognizing its unique qualities and geographical significance, much like tequila and mezcal.

The production of Santo Cuviso Bacanora follows a meticulous and artisanal process. The journey begins with the careful selection of mature Agave Pacifica plants, which are typically harvested after 6 to 15 years of growth, depending on the terrain and weather. The hearts of the agave, known as piñas, are then roasted in earthen ovens for several days using oak and mesquite. This traditional roasting process imparts a distinctive but subtle smoky flavor to the agave.  After roasting, the piñas are chopped to expose the agave to maximum surface contact and then fermented naturally in open-air wooden vats, immersed in well water from our ranch. This fermentation process can take several days, during which wild yeast transforms the agave sugars into alcohol. The fermented liquid is then distilled twice in our copper stills to achieve a 46% ABV; a balance that is both robust and smooth.

Santo Cuviso Bacanora offers a taste profile that is both complex and inviting.  On the nose, it leads with an integrated blend of subtle smoke from the oak and mesquite, along with earth notes and slightly sweet aromas with hints of citrus. The flavor reveals a rich and full-bodied texture, with a balanced interplay of sweet agave notes and smoky undertones – as reflected in the nose. As the flavors unfold, subtle hints of dried herbs emerge, creating a nuanced and layered tasting experience. The finish is long and smooth, leaving a lingering impression of smoke and spice that invites another sip.
